Millet Spinach Pilaf

Ingredients:

-1 cup millet
-2 cups vegetable broth
-1 tablespoon olive oil
-1/2 cup diced onion
-2 cloves garlic, minced
-2 cups fresh spinach, chopped
-Salt and pepper to taste

Instructions:

1. Heat olive oil in a large saucepan over medium heat.

2. Add onion and garlic and sauté until softened, about 5 minutes.

3. Add millet and stir to coat in the oil.

4. Add vegetable broth and bring to a boil.

5. Reduce heat to low, cover, and simmer for 15 minutes.

6. Add spinach and stir to combine.

7. Cover and cook for an additional 5 minutes, or until millet is tender.

8. Season with salt and pepper to taste.

9. Serve warm. Enjoy!
