Spinach and Lentil Stuffed Bell Peppers

Ingredients:

- 4 bell peppers
- 1 cup cooked lentils
- 2 cups fresh spinach, chopped
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Cut the tops off of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.

3. In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1 minute.

4. Add the spinach and cook until wilted, about 3 minutes.

5. Add the lentils, tomatoes, and salt and pepper to taste. Cook for 5 minutes.

6. Remove the skillet from the heat and stir in the cheese.

7. Fill each bell pepper with the lentil mixture.

8. Bake for 25 minutes, or until the bell peppers are tender.

9. Serve warm. Enjoy!
