Spinach and Red Pepper Frittata
Ingredients:
2 red peppers, diced
2 cups fresh spinach
6 eggs
1/2 cup milk
1/2 cup shredded cheese
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat a large skillet over medium-high heat and add the diced red peppers. Cook for 5 minutes, stirring occasionally, until peppers are softened.
3. Add the spinach to the skillet and cook for an additional 2 minutes, stirring occasionally, until spinach is wilted.
4. In a medium bowl, whisk together the eggs and milk.
5. Pour the egg mixture over the vegetables in the skillet and stir to combine.
6. Sprinkle the shredded cheese over the top of the frittata.
7. Place the skillet in the preheated oven and bake for 20 minutes, or until the eggs are set and the cheese is melted and bubbly.
8. Remove from the oven and let cool for 5 minutes before serving. Enjoy!
