Spinach and Tomato Egg Scramble
Ingredients:
- 2 eggs
- 2 cups fresh spinach, chopped
- 1 tomato, diced
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions:
1. Heat olive oil in a medium skillet over medium heat.
2. Add spinach and tomato to the skillet and cook until vegetables are softened, about 5 minutes.
3. Crack eggs into the skillet and season with salt and pepper.
4. Cook, stirring occasionally, until eggs are cooked through, about 5 minutes.
5. Serve warm. Enjoy!
