Spinach and Feta Crepes
Ingredients:
-1 cup all-purpose flour
-2 eggs
-1/2 cup milk
-1/2 cup water
-2 tablespoons melted butter
-1/4 teaspoon salt
-2 cups fresh spinach, chopped
-1/2 cup crumbled feta cheese
Instructions:
1. In a medium bowl, whisk together the flour, eggs, milk, water, melted butter, and salt until smooth.
2. Heat a lightly greased non-stick skillet over medium heat.
3. Pour 1/4 cup of the crepe batter into the skillet and swirl to coat the bottom.
4. Cook for 1-2 minutes, until the edges are lightly browned.
5. Flip the crepe and cook for an additional 1-2 minutes.
6. Transfer the cooked crepe to a plate and repeat with the remaining batter.
7. To assemble the crepes, place 1/4 cup of the chopped spinach and 1 tablespoon of feta cheese in the center of each crepe.
8. Fold the crepe in half and then in half again to form a triangle.
9. Serve warm. Enjoy!
