Spinach and Feta Frittata
Ingredients:
- 6 eggs
- 2 cups of fresh spinach, chopped
- ½ cup of feta cheese, crumbled
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Heat olive oil in a large oven-safe skillet over medium heat.
3. Add spinach and cook until wilted, about 3 minutes.
4. In a medium bowl, whisk together eggs, feta cheese, salt and pepper.
5. Pour egg mixture into skillet and cook until the edges are set, about 5 minutes.
6. Place skillet in preheated oven and bake for 10-12 minutes, or until the center is set.
7. Let cool for 5 minutes before slicing and serving. Enjoy!
