Spinach and Mushroom Frittata

Ingredients:

- 6 eggs
- 2 cups spinach, chopped
- 2 cups mushrooms, sliced
- 1/4 cup onion, diced
- 2 cloves garlic, minced
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat olive oil in a large skillet over medium heat. Add onions and garlic and cook until softened, about 5 minutes.

3. Add mushrooms and cook for an additional 5 minutes.

4. Add spinach and cook until wilted, about 3 minutes.

5. In a medium bowl, whisk together eggs, Parmesan cheese, salt, and pepper.

6. Pour egg mixture into the skillet and stir to combine with vegetables.

7. Transfer skillet to preheated oven and bake for 15-20 minutes, or until eggs are set.

8. Serve warm. Enjoy!
