Spinach and Mushroom Frittata

Ingredients:

- 6 eggs
- 2 cups of fresh spinach, chopped
- 1 cup of mushrooms, sliced
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees Fahrenheit.

2. Heat olive oil in a large skillet over medium heat.

3. Add mushrooms and cook for 3-4 minutes, stirring occasionally.

4. Add spinach and cook for an additional 2-3 minutes, stirring occasionally.

5. In a large bowl, whisk together eggs, salt, and pepper.

6. Add cooked vegetables to the egg mixture and stir to combine.

7. Pour mixture into a greased 9-inch pie plate.

8. Bake in preheated oven for 25-30 minutes, or until eggs are set and lightly golden.

9. Allow to cool for 5 minutes before serving. Enjoy!
