Savory Millet Bowl with Spinach and Onion
Ingredients:
- 1 cup millet
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- Salt and pepper, to taste
Instructions:
1. In a medium saucepan, bring the vegetable broth to a boil.
2. Add the millet and reduce the heat to low. Simmer, covered, for 15-20 minutes, or until the millet is cooked and the liquid is absorbed.
3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
4. Add the spinach and cook until wilted, about 3 minutes.
5. When the millet is cooked, add it to the skillet and stir to combine.
6. Season with salt and pepper, to taste.
7. Serve warm. Enjoy!
