Lasagne with Spinach and Ricotta
Ingredients:
-1 box lasagne noodles
-2 tablespoons olive oil
-1 onion, diced
-2 cloves garlic, minced
-1 teaspoon dried oregano
-1/2 teaspoon red pepper flakes
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 (28-ounce) can crushed tomatoes
-2 cups ricotta cheese
-2 cups frozen spinach, thawed and drained
-1/2 cup grated Parmesan cheese
Instructions:
1. Preheat oven to 375 degrees F.
2. Bring a large pot of salted water to a boil. Add lasagne noodles and cook according to package instructions. Drain and set aside.
3. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, oregano, red pepper flakes, salt, and black pepper and cook for 1 minute.
4. Add crushed tomatoes and bring to a simmer. Simmer for 10 minutes.
5. In a medium bowl, mix together ricotta cheese, spinach, and Parmesan cheese.
6. Grease a 9x13-inch baking dish. Spread 1/3 of the tomato sauce in the bottom of the dish. Layer with 1/3 of the noodles, 1/2 of the ricotta mixture, and 1/3 of the remaining tomato sauce. Repeat layers, ending with a layer of noodles.
7. Cover with foil and bake for 30 minutes. Uncover and bake for an additional 15 minutes. Let stand for 10 minutes before serving. Enjoy!
