Recipe Name: Spring Vegan Rice Paper Rolls

Ingredients:
- 1 cup fresh spinach leaves
- 1 cup corn kernels
- 1 cup shredded savoy cabbage
- 8 rice paper wrappers
- 1/4 cup chopped fresh herbs (such as mint, cilantro, or basil)
- 1/4 cup chopped roasted peanuts
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tsp grated ginger
- Salt and pepper to taste

Instructions:
1. In a large bowl, combine the spinach, corn, and savoy cabbage. Mix well to combine.
2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it softens.
3. Place the softened rice paper wrapper on a clean surface. Add a small handful of the vegetable mixture in the center of the wrapper.
4. Top with a sprinkle of fresh herbs and roasted peanuts.
5. Fold the sides of the wrapper over the filling, then roll it up tightly to form a spring roll.
6. Repeat with the remaining wrappers and filling ingredients.
7. In a small bowl, whisk together the soy sauce, rice vinegar, maple syrup, grated ginger, salt, and pepper to make the dipping sauce.
8. Serve the spring rolls with the dipping sauce on the side.
