Recipe Name: Spring Vegan Rice Paper Rolls

Ingredients:
- 1 cup spinach leaves
- 1 cup corn kernels
- 1 cup shredded savoy cabbage
- 8 rice paper wrappers
- 1 carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- Soy sauce or tamari, for dipping

Instructions:
1. Prepare all the vegetables by washing and chopping them as needed.
2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens.
3. Place the softened rice paper wrapper on a clean surface.
4. Layer a few spinach leaves, corn kernels, savoy cabbage, carrot, red bell pepper, mint leaves, and cilantro leaves in the center of the wrapper.
5. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll it up tightly.
6. Repeat with the remaining rice paper wrappers and filling ingredients.
7. Serve the rice paper rolls with soy sauce or tamari for dipping.
