Butternut Squash, Sweet Potato, and Quinoa Bowl
Ingredients:
-1 cup cooked quinoa
-1 cup cubed butternut squash
-1 cup cubed sweet potato
-1 tablespoon olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place the cubed butternut squash and sweet potato on a baking sheet. Drizzle with olive oil and season with salt and pepper.
3. Bake for 25-30 minutes, stirring halfway through, until the vegetables are tender and lightly browned.
4. Meanwhile, cook the quinoa according to package instructions.
5. To assemble the bowls, divide the quinoa among four bowls. Top with the roasted butternut squash and sweet potato.
6. Serve warm and enjoy!
