Butternut Squash and Steak Salad
Ingredients:
-1/2 butternut squash, peeled and cubed
-1 lb steak, cut into cubes
-1/4 cup olive oil
-1/4 cup balsamic vinegar
-1/4 cup honey
-1/4 teaspoon garlic powder
-Salt and pepper, to taste
-4 cups mixed greens
-1/4 cup crumbled feta cheese
Instructions:
1. Preheat oven to 400 degrees F.
2. Place cubed butternut squash on a baking sheet and drizzle with 2 tablespoons of olive oil. Sprinkle with salt and pepper. Roast in preheated oven for 20 minutes, or until squash is tender.
3. Heat remaining olive oil in a large skillet over medium-high heat. Add steak cubes and cook until browned, about 5 minutes.
4. In a small bowl, whisk together balsamic vinegar, honey, garlic powder, salt and pepper.
5. Place mixed greens in a large bowl. Top with cooked butternut squash and steak cubes. Drizzle with balsamic vinaigrette and toss to combine.
6. Sprinkle with feta cheese and serve. Enjoy!
