Steak and Sweet Potato Hash
Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 large onion, diced
- 2 tablespoons olive oil
- 1 pound steak, cut into cubes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/4 cup mayonnaise
Instructions:
1. Preheat oven to 400°F.
2. In a large bowl, combine the diced sweet potatoes and onion. Drizzle with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper. Toss to coat.
3. Spread the sweet potato and onion mixture onto a baking sheet. Bake for 25 minutes, stirring once halfway through.
4. Meanwhile, heat a large skillet over medium-high heat. Add the steak cubes and cook for 5-7 minutes, stirring occasionally, until cooked through.
5. Once the sweet potato and onion mixture is done baking, add it to the skillet with the steak. Stir to combine.
6. Drizzle the mayonnaise over the steak and sweet potato hash. Stir to combine.
7. Serve warm. Enjoy!
