Steelhead with Arugula and Sauerkraut
Ingredients:
- 2 steelhead fillets
- 2 cups sauerkraut
- 2 cups arugula
- 2 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons sunflower seeds
- 2 tablespoons grated parmigiano
- 2 cloves garlic, minced
Instructions:
1. Preheat oven to 350°F.
2. Place steelhead fillets on a baking sheet lined with parchment paper.
3. In a medium bowl, mix together sauerkraut, arugula, extra virgin olive oil, apple cider vinegar, sunflower seeds, parmigiano, and garlic.
4. Spread the sauerkraut mixture over the steelhead fillets.
5. Bake for 15-20 minutes, or until the fish is cooked through.
6. Serve with a side of your favorite vegetables. Enjoy!
