Stir-Fried Chicken and Eggs
Ingredients:
- 2 large eggs
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon olive oil
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken pieces and season with the pepper and salt. Cook, stirring occasionally, until the chicken is cooked through, about 5 minutes.
3. Push the chicken to one side of the skillet and add the eggs. Scramble the eggs until they are cooked through, about 2 minutes.
4. Stir the chicken and eggs together and cook for another minute or two, until everything is heated through.
5. Serve immediately. Enjoy!
