Stir-Fried Chicken and Rice

Ingredients:

- 2 boneless, skinless chicken breasts, cut into cubes
- 1 cup uncooked white rice
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through.

3. Add the garlic and cook for 1 minute.

4. Add the bell peppers and cook for 3-4 minutes, stirring occasionally.

5. Add the rice and cook for 2-3 minutes, stirring occasionally.

6. Add the soy sauce and season with salt and pepper to taste.

7. Reduce the heat to low and cover the skillet. Cook for 15-20 minutes, stirring occasionally, until the rice is cooked through.

8. Serve hot. Enjoy!
