Make Stir-Fried Chicken and Vegetable Medley
Recipe: Stir-Fried Chicken and Vegetable Medley
Ingredients:
- 2 chicken breasts, sliced into thin strips
- 1 cup broccoli florets
- 2 tablespoons soy sauce
- 1 tomato, diced
- 2 potatoes, peeled and diced
- 1 carrot, peeled and sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 egg, beaten
- 1 bell pepper, sliced
Instructions:
1. In a microwave-safe bowl, steam the broccoli florets for 3-4 minutes until slightly tender. Set aside.
2. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the sliced chicken breasts and cook until browned and cooked through. Remove from the pan and set aside.
3. In the same pan, add the remaining olive oil. Saute the onion, garlic, carrot, and bell pepper until slightly softened.
4. Add the diced tomato and potatoes to the pan. Cook until the potatoes are tender.
5. Push the vegetables to one side of the pan and pour the beaten egg into the other side. Scramble the egg until cooked, then mix it with the vegetables.
6. Add the cooked chicken back to the pan. Pour in the soy sauce and stir to combine.
7. Finally, add the steamed broccoli to the pan and toss everything together until well combined.
8. Serve the stir-fried chicken and vegetable medley hot and enjoy your delicious lunch!
