Stir-Fried Chicken and Vegetables
Ingredients:
- 2 boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 cup sliced mushrooms
- 1 red bell pepper, cut into 1-inch cubes
- 1 green bell pepper, cut into 1-inch cubes
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until golden brown, about 5 minutes.
3. Add the mushrooms, bell peppers, and garlic and cook for an additional 5 minutes.
4. Add the soy sauce and sesame oil and stir to combine.
5. Season with salt and pepper, to taste.
6. Cook for an additional 5 minutes, or until the vegetables are tender.
7. Serve over cooked rice or noodles. Enjoy!
