Ingredients:
- 1 lb chicken breast, thinly sliced
- 1 cup broccoli florets
- 1 cup sliced bell peppers (red, green, yellow)
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1/2 cup sliced onions
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 1/4 cup chicken broth
Instructions:
1. In a small bowl, mix together soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Marinate the sliced chicken in this mixture for at least 15 minutes.
2. Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and stir-fry for 30 seconds until fragrant.
3. Add the marinated chicken to the pan and stir-fry until it is cooked through, about 5-7 minutes.
4. Add the sliced onions, carrots, and mushrooms to the pan. Stir-fry for another 3-4 minutes until the vegetables start to soften.
5. Add the broccoli florets and sliced bell peppers to the pan. Stir-fry for an additional 2-3 minutes.
6. Pour in the chicken broth and stir well to combine all the ingredients. Cook for another 2-3 minutes until the vegetables are tender-crisp.
7. Taste and adjust seasoning if needed. Serve the stir-fried chicken with mixed vegetables hot over steamed rice.
