Stir-Fried Egg and Noodle

2 eggs
2 ounces of vermicelli noodles
1/4 cup of corn kernels
1 tomato, diced

1. Crack the eggs into a bowl and whisk until blended.

2. Bring a pot of water to a boil and add the vermicelli noodles. Cook for 3-4 minutes until the noodles are al dente. Drain and set aside.

3. Heat a wok or large skillet over medium-high heat and add the eggs. Cook, stirring occasionally, until the eggs are scrambled and cooked through.

4. Add the corn kernels and tomato to the wok and stir-fry for 1-2 minutes.

5. Add the cooked noodles to the wok and stir-fry for an additional 2-3 minutes.

6. Serve the stir-fried egg and noodle dish hot. Enjoy!
