Ingredients:
- 2 eggs
- 100g glass noodles
- 1 large potato, peeled and diced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions:
1. Soak the glass noodles in hot water for about 10 minutes until softened. Drain and set aside.
2. In a bowl, beat the eggs with a pinch of salt and pepper. Set aside.
3. Heat vegetable oil in a large pan or wok over medium heat. Add the minced garlic and ginger, and sauté until fragrant.
4. Add the diced potatoes to the pan and cook until they start to soften, about 5-7 minutes.
5. Push the potatoes to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
6. Add the soaked glass noodles to the pan and stir-fry everything together.
7. Season with soy sauce, salt, and pepper. Mix well to combine all the ingredients.
8. Continue to cook for another 2-3 minutes until everything is heated through.
9. Garnish with chopped green onions before serving.
