Make Stir-Fried Mixed Vegetables with Chicken

Ingredients:
- 200g chicken, sliced
- 1 cup cabbage, chopped
- 1 egg
- 1 small eggplant, sliced
- 1 cup broccoli florets
- 1 tomato, diced
- 1/2 cup lotus root slices
- 1 cup baby bok choy, chopped
Instructions:
1. Heat some oil in a wok or large pan over medium-high heat.
2. Add the sliced chicken and stir-fry until cooked through, then remove from the pan and set aside.
3. In the same pan, add a little more oil if needed and crack the egg into the pan. Scramble the egg until cooked, then remove and set aside with the chicken.
4. Add the chopped cabbage, sliced eggplant, broccoli florets, diced tomato, lotus root slices, and baby bok choy to the pan.
5. Stir-fry the vegetables until they are tender but still slightly crisp.
6. Return the cooked chicken and egg to the pan and toss everything together.
7. Season with salt, pepper, and any other desired seasonings.
