Stir-Fried Rice Noodles with Mushrooms, Tomatoes, and Spring Onion
Ingredients:
- 8 ounces of rice noodles
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1 cup of sliced mushrooms
- 1 cup of diced tomatoes
- 1/2 cup of sliced spring onion
- 2 tablespoons of soy sauce
- 1 teaspoon of sugar
- Salt and pepper to taste
Instructions:
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. Heat the oil in a large skillet over medium-high heat. Add the garlic and mushrooms and cook for 2 minutes.
3. Add the tomatoes and spring onion and cook for an additional 2 minutes.
4. Add the cooked noodles, soy sauce, sugar, salt, and pepper. Stir to combine.
5. Cook for an additional 2 minutes, stirring occasionally, until the noodles are heated through.
6. Serve hot. Enjoy!
