Stir-Fried Rice with Pork
Ingredients:
- 2 cups of cooked rice
- 1 pound of pork, cut into small cubes
- 2 tomatoes, diced
- 2 onions, diced
- 1 zucchini, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 eggs, beaten
Instructions:
1. Heat a large skillet or wok over medium-high heat.
2. Add the pork cubes and cook until lightly browned, about 5 minutes.
3. Add the tomatoes, onions, zucchini, garlic, and carrots to the skillet and cook until the vegetables are tender, about 5 minutes.
4. Push the vegetables to one side of the skillet and add the beaten eggs. Scramble the eggs until cooked through, about 2 minutes.
5. Add the cooked rice to the skillet and stir to combine.
6. Cook until the rice is heated through, about 5 minutes.
7. Serve hot. Enjoy!
