Stir-Fried Rice with Streaky Pork
Ingredients:
- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 potatoes, peeled and diced
- 1 eggplant, peeled and diced
- 250g streaky pork, cut into thin strips
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- Salt and pepper, to taste
Instructions:
1. Heat the oil in a wok or large frying pan over medium-high heat.
2. Add the garlic and onion and stir-fry for 1 minute.
3. Add the tomatoes, potatoes, and eggplant and stir-fry for 3 minutes.
4. Add the streaky pork and stir-fry for 3 minutes.
5. Add the cooked rice, soy sauce, and oyster sauce and stir-fry for 2 minutes.
6. Season with salt and pepper, to taste.
7. Serve hot.
