Stir-Fried Rice with Vegetables

Ingredients:

- 2 tablespoons soy sauce
- 1 leek, thinly sliced
- 1 cup mushrooms, sliced
- 1 cup carrots, diced
- 2 cloves garlic, minced
- 1 spring onion, thinly sliced
- 1 tablespoon sesame oil
- 2 cups cooked white rice
- 2 eggs, lightly beaten

Instructions:

1. Heat a large skillet over medium-high heat. Add the sesame oil and swirl to coat the bottom of the pan.

2. Add the leek, mushrooms, carrots, garlic, and spring onion and stir-fry for 3-4 minutes, or until vegetables are tender.

3. Add the soy sauce and stir to combine.

4. Add the cooked rice and stir to combine.

5. Push the rice and vegetables to the sides of the pan to create a well in the center.

6. Pour the eggs into the well and scramble until cooked through.

7. Mix the eggs into the rice and vegetables and stir-fry for an additional 2-3 minutes, or until everything is heated through.

8. Serve hot. Enjoy!
