Stir-Fried Shrimp Noodles

Ingredients:

- 1 lb. shrimp, peeled and deveined
- 8 oz. noodles (such as udon or soba)
- 2 zucchini, cut into thin half-moons
- 2 chilli peppers, seeded and thinly sliced
- 4 cloves garlic, minced
- 2 teaspoons grated ginger
- 2 tablespoons soy sauce
- 2 scallions, thinly sliced
- 2 carrots, cut into thin matchsticks
- 2 tablespoons vegetable oil

Instructions:

1. Bring a large pot of salted water to a boil. Add the noodles and cook until al dente, about 5 minutes. Drain and set aside.

2. Heat the oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until just pink, about 2 minutes.

3. Add the zucchini, chilli peppers, garlic, and ginger and cook until the vegetables are tender, about 3 minutes.

4. Add the soy sauce, scallions, and carrots and cook for 1 minute.

5. Add the cooked noodles and toss to combine. Cook for 1 minute more.

6. Serve hot. Enjoy!
