Stir-Fried Udon Noodles with Chicken
Ingredients:
- 300g chicken, cut into bite-sized pieces
- 2 zucchinis, cut into thin strips
- 2 carrots, cut into thin strips
- 2 scallions, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 200g udon noodles
- 2 tablespoons peanut butter
Instructions:
1. Heat a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5 minutes.
2. Add the zucchini, carrots, and scallions to the skillet and cook for another 5 minutes, stirring occasionally.
3. In a small bowl, whisk together the soy sauce, fish sauce, ginger, and garlic.
4. Add the udon noodles to the skillet and pour the sauce over the top. Stir everything together and cook for another 5 minutes.
5. Add the peanut butter and stir until it is fully incorporated.
6. Serve the stir-fried udon noodles with chicken hot. Enjoy!
