Stuffed Bell Pepper Chicken and Rice

Ingredients:

- 4 bell peppers
- 2 cups cooked white rice
- 2 cups cooked, shredded chicken
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 1/2 cup diced mushrooms
- 1/2 cup shredded cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the bell peppers in a baking dish.

3. In a large bowl, combine the cooked rice, chicken, onion, celery, carrots, mushrooms, cheese, garlic, olive oil, salt, and pepper. Mix until combined.

4. Fill each bell pepper half with the chicken and rice mixture.

5. Bake for 25-30 minutes, or until the bell peppers are tender and the filling is cooked through.

6. Serve warm. Enjoy!
