Make Stuffed Bell Peppers

Stuffed Bell Peppers

Ingredients:

-3 bell peppers, halved and seeded
-1 onion, diced
-2 potatoes, peeled and diced
-2 tablespoons olive oil
-Salt and pepper to taste
-1/2 cup shredded cheese (optional)

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large skillet, heat olive oil over medium heat. Add onions and potatoes and cook, stirring occasionally, until vegetables are tender, about 10 minutes.

3. Season with salt and pepper to taste.

4. Place bell pepper halves in a baking dish. Divide the potato and onion mixture among the bell pepper halves.

5. Top with shredded cheese, if desired.

6. Bake in preheated oven for 25 minutes, or until bell peppers are tender.

7. Serve warm. Enjoy!
