Make Stuffed Bell Peppers



Stuffed Bell Peppers

Ingredients:

-4 bell peppers
-1 lb ground meat (beef, turkey, or pork)
-1/2 lb cooked chicken, shredded
-1 cup cooked white rice
-1/2 cup diced onion
-1/2 cup diced celery
-1/2 cup diced carrots
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1 teaspoon dried oregano
-1/2 teaspoon dried basil
-1/2 teaspoon dried thyme
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/2 cup chicken broth
-1/2 cup grated Parmesan cheese

Instructions:

1. Preheat oven to 375 degrees F.

2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.

3. In a large skillet over medium heat, cook the ground meat until no longer pink. Drain off any excess fat.

4. Add the onion, celery, carrots, garlic powder, onion powder, oregano, basil, thyme, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally.

5. Add the cooked chicken, cooked rice, and chicken broth to the skillet. Cook for an additional 5 minutes, stirring occasionally.

6. Remove the skillet from the heat and stir in the Parmesan cheese.

7. Fill each bell pepper with the meat and rice mixture. Pour the remaining chicken broth into the baking dish.

8. Cover the baking dish with foil and bake for 25 minutes.

9. Remove the foil and bake for an additional 10 minutes.

10. Serve the stuffed bell peppers hot. Enjoy!
