Recipe Name: Stuffed Chile Rellenos

Ingredients:
- 4 chile cerrano peppers
- 1 carrot, diced
- 2 potatoes, diced
- 1 cup cooked rice
- 1/2 cup lettuce, shredded
- 2 tbsp butter
- 2 tbsp oil
- Salt to taste
- 2 tomatoes, diced
- 1/2 cup Philadelphia cheese

Step by Step Guide:
1. Preheat the oven to 375°F (190°C).
2. Wash the chile cerrano peppers and make a slit lengthwise, removing the seeds carefully.
3. In a pan, heat 1 tbsp oil and sauté the diced carrots and potatoes until they are cooked through. Season with salt.
4. In a bowl, mix the cooked rice, shredded lettuce, sautéed carrots, and potatoes.
5. Stuff each chile cerrano pepper with the rice and vegetable mixture.
6. Place the stuffed peppers on a baking tray lined with parchment paper.
7. In a small saucepan, melt the butter and remaining oil. Brush the peppers with the melted butter-oil mixture.
8. Bake the stuffed peppers in the preheated oven for 20-25 minutes or until the peppers are tender.
9. In a separate bowl, mix the diced tomatoes and Philadelphia cheese.
10. Once the peppers are cooked, remove them from the oven and top each pepper with the tomato and cheese mixture.
11. Return the peppers to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
12. Serve the stuffed chile rellenos hot and enjoy!
