Ingredients:
- Chiles
- Arroz
- Zanahoria
- Jitomate
- Lechuga
- Papas
- Queso Philadelphia
- Mantequilla
Instructions:
1. Preheat the oven to 350°F (180°C).
2. Cook the arroz according to package instructions and set aside.
3. In a skillet, melt mantequilla over medium heat. Add diced zanahoria, jitomate, and papas. Cook until vegetables are tender.
4. Cut the tops off the chiles and remove the seeds.
5. Stuff the chiles with the cooked arroz and vegetable mixture.
6. Place the stuffed chiles in a baking dish.
7. Top each stuffed chile with a dollop of queso Philadelphia.
8. Bake in the preheated oven for 20-25 minutes, or until the chiles are tender.
9. Serve the stuffed chile rellenos hot, garnished with lechuga on the side.
