Make Stuffed Eggplant

Stuffed Eggplant

Ingredients:

-2 large eggplants
-1 lb ground beef
-1 large onion, diced
-2 large tomatoes, diced
-1/4 cup olive oil
-Salt and pepper to taste
-1/4 cup grated Parmesan cheese

Instructions:

1. Preheat oven to 375°F.

2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving a 1/4-inch thick shell.

3. Place the eggplant shells on a baking sheet and brush with olive oil.

4. Bake in preheated oven for 15 minutes.

5. Meanwhile, heat a large skillet over medium heat and add the ground beef. Cook, stirring frequently, until the beef is cooked through.

6. Add the diced onion and tomatoes to the skillet and cook for an additional 5 minutes.

7. Remove the skillet from the heat and season with salt and pepper to taste.

8. Divide the beef mixture among the eggplant shells and top with grated Parmesan cheese.

9. Bake in preheated oven for an additional 15 minutes, or until the cheese is melted and bubbly.

10. Serve warm. Enjoy!
