Stuffed Eggplant with Ground Beef


- 2 large eggplants

- 1 lb ground beef

- 1 onion, diced

- 1 bell pepper, diced

- 2 cloves garlic, minced

- 2 tomatoes, diced

- 1 cup brussel sprouts, chopped

- 2 tablespoons olive oil

- Salt and pepper to taste


1. Preheat oven to 350 degrees F.

2. Slice the eggplants in half lengthwise and scoop out the flesh, leaving a 1/2 inch border. Place the eggplant halves on a baking sheet and set aside.

3. Heat the olive oil in a large skillet over medium-high heat. Add the onion, bell pepper, garlic, tomatoes, and brussel sprouts and cook until the vegetables are tender, about 5 minutes.

4. Add the ground beef to the skillet and cook until the beef is browned, about 8 minutes. Season with salt and pepper to taste.

5. Spoon the beef mixture into the eggplant halves. Bake in the preheated oven for 25 minutes, or until the eggplant is tender. Serve warm.
