Recipe Name: Stuffed Potato Skins

Ingredients:
- 4 large potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cloves garlic, minced
- 1 tomato, diced
- 2 eggs
- 1/2 cup flour
- 1/4 cup sugar
- 1/4 cup water

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and prick them with a fork. Rub them with olive oil, salt, and pepper. Place them on a baking sheet and bake for about 45-50 minutes, or until they are tender.
3. While the potatoes are baking, prepare the filling. In a skillet, heat some olive oil over medium heat. Add the minced garlic and sauté until fragrant.
4. Add the diced tomato to the skillet and cook until softened. Season with salt and pepper to taste.
5. Once the potatoes are cooked, let them cool slightly. Cut them in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skins.
6. In a bowl, mash the scooped-out potato flesh. Add the tomato mixture and mix well.
7. Fill each potato skin with the mixture.
8. In a separate bowl, whisk together the eggs, flour, sugar, and water to make a batter.
9. Dip each stuffed potato skin into the batter, coating it evenly.
10. Heat some oil in a skillet over medium heat. Fry the stuffed potato skins until golden brown on both sides.
11. Serve hot and enjoy your delicious stuffed potato skins!
