Stuffed Squash and Sweet Pepper Rice
Ingredients:
- 2 large squash
- 2 sweet peppers, diced
- 2 cups of cooked rice
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Cut the squash in half lengthwise and scoop out the seeds.
3. Place the squash halves cut side up on a baking sheet and brush with olive oil.
4. Bake for 25 minutes or until the squash is tender.
5. Meanwhile, heat the remaining olive oil in a large skillet over medium heat.
6. Add the diced sweet peppers and cook for 5 minutes or until softened.
7. Add the cooked rice and stir to combine.
8. Season with salt and pepper to taste.
9. Remove the squash from the oven and fill each half with the rice and pepper mixture.
10. Return to the oven and bake for an additional 10 minutes or until the squash is golden brown.
11. Serve warm. Enjoy!
