Stuffed Tomatoes with Ground Meat
Ingredients:
- 4 large tomatoes
- 1 pound ground meat
- 1/4 cup olive oil
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped celery
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Cut the tops off the tomatoes and scoop out the insides, reserving the tomato flesh.
3. Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, celery, and parsley and cook until the vegetables are softened, about 5 minutes.
4. Add the ground meat and cook until browned, about 10 minutes.
5. Add the tomato flesh, garlic powder, oregano, salt, and pepper and cook for an additional 5 minutes.
6. Stuff the tomatoes with the meat mixture and place in a baking dish.
7. Bake for 20 minutes, or until the tomatoes are tender.
8. Serve warm. Enjoy!
