Make Stuffed Zucchini with Mozzarella

Recipe Name: Stuffed Zucchini with Mozzarella

Ingredients:
- 1 zucchini
- 1 egg
- 50g mozzarella cheese
- Salt and pepper to taste
- Olive oil for cooking

Instructions:

1. Preheat the oven to 180°C (350°F).
2. Cut the zucchini in half lengthwise and scoop out the flesh using a spoon, leaving about 1/4 inch of flesh around the edges.
3. Chop the zucchini flesh into small pieces and set aside.
4. In a bowl, beat the egg and season with salt and pepper.
5. Add the chopped zucchini flesh to the egg mixture and mix well.
6. Fill the hollowed-out zucchini halves with the egg and zucchini mixture.
7. Cut the mozzarella cheese into small cubes and place them on top of the filled zucchini halves.
8. Drizzle a little olive oil over the top of the stuffed zucchinis.
9. Place the stuffed zucchinis on a baking tray and bake in the preheated oven for about 20-25 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
10. Remove from the oven and let cool slightly before serving.
