Make Superfood Salad with Protein
Recipe Name: Superfood Salad with Protein
Ingredients:
- 1 head of broccoli, chopped
- 2 stalks of celery, diced
- 1 head of romaine lettuce, chopped
- 1 cup of spinach leaves
- 1/4 cup of seaweed, chopped
- 2 sweet potatoes, diced
- 2 yams, diced
- Handful of fresh basil leaves
- 2 carrots, shredded
- Juice of 2 lemons
- Juice of 2 limes
- 1/2 cup of shredded coconut
- 1 avocado, diced
- 1/2 lb of beef, cooked and sliced
- 1/2 lb of chicken, cooked and shredded
- 1/2 lb of turkey, cooked and diced
- 1/2 cup of almond flour
- Handful of mixed nuts
Instructions:
1. In a large mixing bowl, combine the broccoli, celery, romaine lettuce, spinach, seaweed, sweet potatoes, yams, basil, and carrots.
2. Squeeze the lemon and lime juice over the salad and toss to combine.
3. Add the shredded coconut and diced avocado to the salad and mix well.
4. Top the salad with the cooked beef, chicken, and turkey.
5. In a small bowl, mix the almond flour with a bit of water to create a dressing consistency. Drizzle the almond flour dressing over the salad.
6. Sprinkle the mixed nuts over the top of the salad for added crunch.
7. Serve the superfood salad with protein immediately and enjoy!
