Ingredients:
- 2 medium eggplants
- 2 eggs
- 1/2 cup jam (any flavor of your choice)
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the eggplants and cut them into 1-inch cubes.
3. Place the eggplant cubes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
4. Roast the eggplant in the preheated oven for about 20-25 minutes, or until they are soft and slightly caramelized.
5. In a bowl, whisk the eggs and season with a pinch of salt and pepper.
6. Heat a non-stick skillet over medium heat and pour in the whisked eggs. Cook until the eggs are scrambled and set aside.
