Ingredients:
- 2 medium sweet potatoes, peeled and diced
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 leek, sliced
- 1 cup plain yoghurt
- Salt and pepper to taste
- Olive oil
- Lemon juice

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 25-30 minutes or until tender.
3. In a large bowl, combine the roasted sweet potatoes, chickpeas, diced cucumber, and sliced leek.
4. In a separate bowl, mix the plain yoghurt with a squeeze of lemon juice, salt, and pepper to make the dressing.
5. Pour the yoghurt dressing over the salad and toss gently to combine.
6. Serve the sweet potato and chickpea salad with yoghurt dressing chilled or at room temperature.
