Sweet Potato and Mushroom Parmesan

Ingredients:

- 2 large sweet potatoes, peeled and diced

- 1 cup sliced mushrooms
- 1/2 cup grated parmesan cheese
- 1/2 cup coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine the diced sweet potatoes, mushrooms, parmesan cheese, and coconut milk.

3. Drizzle the olive oil over the mixture and season with salt and pepper.

4. Transfer the mixture to a greased baking dish.

5. Bake for 30 minutes, or until the sweet potatoes are tender and the cheese is golden brown.

6. Serve warm and enjoy!
