Make Sweet Potato and Pak Choi Fried Rice
Sweet Potato and Pak Choi Fried Rice
Ingredients:
- 2 cups cooked white rice
- 2 sweet potatoes, peeled and diced
- 2 carrots, peeled and diced
- 2 eggs
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups pak choi, chopped
- 2 tablespoons soy sauce
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the sweet potatoes and carrots and cook for 5 minutes, stirring occasionally.
3. Add the garlic and cook for 1 minute.
4. Add the pak choi and cook for 2 minutes.
5. Add the cooked rice and stir to combine.
6. Push the rice and vegetables to one side of the skillet and crack the eggs into the other side.
7. Scramble the eggs and mix them into the rice and vegetables.
8. Add the soy sauce and season with salt and pepper, to taste.
9. Cook for an additional 2 minutes, stirring occasionally.
10. Serve warm. Enjoy!
