Sweet Potato and Pear Gratin

Ingredients:

- 2 large sweet potatoes, peeled and cut into 1/2 inch cubes
- 1 pear, peeled and cut into 1/2 inch cubes
- 1 carrot, peeled and grated
- 1 cup cooked rice
- 1/2 cup cooked pasta
- 1/2 cup grated emmental cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine sweet potatoes, pear, carrot, rice, and pasta.

3. In a separate bowl, mix together grated emmental cheese, butter, olive oil, salt, and pepper.

4. Grease a 9x13 inch baking dish with butter or non-stick cooking spray.

5. Pour the sweet potato mixture into the baking dish and spread evenly.

6. Pour the cheese mixture over the top and spread evenly.

7. Bake for 25-30 minutes, or until the top is golden brown and the potatoes are tender.

8. Serve warm. Enjoy!
