Sweet Potato and Potato Shepherd's Pie

Ingredients:

- 2 large sweet potatoes
- 2 large potatoes
- 1 cup cooked rice
- 1 cup cooked pasta
- 1 onion, finely chopped
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 2 tomatoes, diced
- 1 red pepper, diced
- 1 jar of bolognaise sauce
- 1 apple, peeled and diced
- 1 egg

Instructions:

1. Preheat the oven to 350°F.

2. Peel and dice the sweet potatoes and potatoes. Place them in a large pot and cover with water. Bring to a boil and cook until tender, about 10 minutes. Drain and set aside.

3. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the onion and cook until softened, about 5 minutes. Add the green beans, tomatoes, and pepper and cook for another 5 minutes.

4. Add the cooked rice and pasta to the skillet and stir to combine. Pour in the bolognaise sauce and stir to combine.

5. Add the cooked sweet potatoes and potatoes to the skillet and stir to combine.

6. Transfer the mixture to a 9x13 inch baking dish.

7. In a small bowl, whisk together the egg and apple. Pour the mixture over the top of the shepherd's pie.

8. Bake for 30 minutes, or until the top is golden brown.

9. Let cool for 10 minutes before serving. Enjoy!
