Sweet Potato Coconut Cake

Ingredients:

- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup mashed sweet potato
- 1/2 cup coconut flakes
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup raisins
- 1 egg
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.

2. In a large bowl, mix together the flour, sugar, sweet potato, coconut flakes, cinnamon, nutmeg, and raisins.

3. In a separate bowl, beat together the egg, baking powder, and vanilla extract.

4. Add the egg mixture to the flour mixture and stir until just combined.

5. Pour the batter into the prepared cake pan.

6. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

7. Let cool before serving. Enjoy!
