Sweet Potato Penne with Ground Beef


-1 lb ground beef
-1 large sweet potato, peeled and diced
-1 large tomato, diced
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1/2 teaspoon dried oregano
-1/2 teaspoon dried basil
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-1/4 cup olive oil
-1/2 lb penne pasta
-1/4 cup grated Parmesan cheese


1. Preheat oven to 400°F.

2. In a large bowl, mix together the ground beef, sweet potato, tomato, garlic powder, onion powder, oregano, basil, salt, and pepper.

3. Heat the olive oil in a large skillet over medium-high heat. Add the beef mixture and cook, stirring occasionally, until the beef is cooked through, about 8 minutes.

4. Meanwhile, cook the penne pasta according to package instructions.

5. Once the beef is cooked, add the cooked penne to the skillet and stir to combine.

6. Transfer the mixture to a 9x13 inch baking dish. Sprinkle the Parmesan cheese over the top.

7. Bake in preheated oven for 15 minutes, or until the cheese is melted and bubbly.

8. Serve warm. Enjoy!
